Scarlet Prawns

The French refer to them as the "Crevette Imperiale", The Spanish call them "Carabineros". Aussies call them "The Scarlet Prawn".

Perfect for sashimi drizzled in a little olive oil or straight on the grill. Flavour profile is amazing, similar to sweet lobster.

Not readily found on the market and a prized possession amongst chefs.
